Oxo Roast Potatoes

Ingredients
4 large potatoes Maris Piper work well for this recipe
2 beef stock cubes
Low calorie cooking spray
Instructions
Peel the potatoes and chop into quarters. Rinse in cold water.
Place the potatoes in a large saucepan and sprinkle with one of the stock cubes. Pour over boiling water and bring to the boil over a medium to high heat. Allow to simmer for 10 minutes, until starting to soften.
Pour the potatoes into a colander, and shake vigorously so the surface of the potatoes become roughed up.
The Actifry Method
Put the potatoes in the Actifry, and sprinkle over the remaining stock cube. Spritz liberally with low calorie cooking spray.
Cook in the Actifry for 20-25 minutes, or until crispy on the outside and fluffy on the inside.
The Oven Method
Preheat oven to 180 degrees. Make up the remaining stock cube with 200ml boiling water.
Place the potatoes into a deep baking dish. Pour over the stock and then spritz the tops of the potatoes with low calorie cooking spray.
Bake in the oven for 40 minutes, or until the stock has evaporated and the potatoes are crispy on the outside and fluffy on the inside.
